Brooklyn Flea just opened, and, in a few months, bargain hunters can eat at a new restaurant at 7 Greene Avenue, just off of Fulton Street. Former Perry Street sous-chef Tyler Kord describes his concept as New American, with a little Hungarian, some Korean, and a bit of Wisconsin thrown in. His time in Vongerichtens kitchen is also an influence, he says. I learned about a lot of the intense behind-the-scenes preparation to make a simple-looking dish. That explains why he refers to his cooking style as casual badass. Don't try to make a reservation just yet the restaurant is full of plywood and in need of a liquor license. But the principals are in place, including former Perry Street pastry chef Amanda Clark, Weather Up designer Matthew Maddy, and Lil' Frankies GM Matt Suchomski.
