What happens when you compare recipes from the Shopsins, Carmines, and Chanterelle cookbooks to the real-deal dishes at the restaurants? The slutty pancakes come with pistachios and grade-A syrup at Shopsins, yet theres no mention of them in the book. And, compared to the cookbook version, the linguine and white clam sauce at Carmines used significantly more garlic, thickly sliced, not coarsely chopped as in the recipe, and featured both whole littlenecks and chopped cherrystone clams. And thats not even getting into the troubles of trying to reproduce an Achatz/Keller feast
