La Carbonara, the latest addition to the Malta brothers empire, opened on West 14th Street yesterday. As we mentioned when we showed you the menu, Nero chef Giuliano Matarese is preparing entrées priced at $15 and under. When we spoke to Enrico Malta, he said he wasn’t planning to go overboard on serving sizes: “I don’t want to see a big portion of pasta coming out — it’s going to be like they do in Italy. They’re not half-portions but they’re not overly bastardized, overwhelming American portions.” Take a look at some of the dishes in our slideshow.
