Matthew Schaefer, who left Bussaco partly because the owner found his style a little too twee for the neighborhood, has landed on his feet, replacing José Luis Martinez at the Mermaid Inn’s East Village location. You’ll recall Schaefer is a Le Bernardin alum. He’s only been in the Mermaid’s kitchen a few days, so we’ll have to wait for his new menu.
