Meet the Pigs You’ll Eat in August

Boston chef Will Gilson is cooking at the James Beard House in August and hes raising the pigs to be served at the dinner himself. MenuPages Boston spoke to the chef and got some cute (and delicious) photos of Porcini and Truffle. Gilson is confident that he wont go all Charlottes Web when it comes time to say good-bye to the pigs. Im more concerned about them having a good life before theyre slaughtered, he says.
