A couple of weeks ago, Piece of Chicken (one of midtown’s esteemed $1 grub joints) raised the price of its breast by $1 (it’s now $2) and the price of its livers and its two-piece wings by 50 cents, to $1.50. Owner Alberta Wright tells us it’s because she’s been undercharging (for the breast meat, especially) since she opened. “I’ve not been charging the right prices. I need to make more money on that breast,” she says. According to Wright, customers were wary of the change at first, but they’ve now gone back to ordering breast meat. Wright gets her chickens for between 83 cents and 93 cents per pound, and pays between $2,000 and $3,000 per month in rent. She says her numbers are okay now, and she expects them to pick up. “A lot of my customers are away for summer. They’re not just people who can’t afford to buy food at normal prices. All kinds of people come to my window — rich people, millionaires, movie stars … ” Besides, folks were unhappy even when pieces of chicken were $1 plus tax. “I get a lot of people who are upset about paying tax — they accuse me of not paying my tax, but I can bring the receipts from the bank. You have that kind of problem when you’re dealing with people at a window or at a takeout as opposed to a restaurant.”
