As promised, La Crpe Parisienne opens in Soho today, serving about five savory crpes and ten sweet ones. The chain was started by three brothers in Mexico, of all places, in 1996, but one of them, Andres Mier y Teran, assures us his product is exactly the same as youd find in France (he lived there for several years). Actually, hes breaking from orthodoxy in a couple of ways he serves the made-to-order crpes in a paper cone (true to the stores green leanings, the paper is recycled) and hes planning to incorporate local ingredients such as Van Leeuwen ice cream (in addition to chocolate and vanilla, therell be a custom cinnamon flavor), peanut butter and white chocolate from Le Pain Quotidian, and Russ & Daughters cream cheese. Yes, there will also be a smoked-salmon crpe. The company is looking at other locations in the West and East Villages, the Lower East Side, and the Upper East Side they hope to have four locations up and running within the next year.
