Green, Organic Taco Truck Takes to Streets of Jersey City

The Life Vicarious notices that another taco truck, called The Taco Truck, has finally launched in Jersey City, joining the Krave Korean-barbecue truck and a few others near Journal Square the Grove Street PATH stop. When we told you about plans for the LEED-certified truck a year ago, the chef was going to be Jason Potter, but now the man behind the tacos (made from organic local ingredients and priced at two for $4.50) is Roberto Santibanez, former Culinary Director at Rosa Mexicano. The menu of tacos, tamales, tortas, soups, and salads is still in flux, but to keep up on the latest, follow “TTT” on Twitter or check out its media-friendly website (yes folks, this truck has a CEO, a COO, and an in-house marketing director).
