When last we checked in with Sunset Park gin outfit Breuckelen Distillery, the freshly painted space was empty save for a forklift and a desk. Five months later, it’s a bustling alcohol operation, as proprietor Brad Estabrooke tells Details. In the model of other local distilleries, everything’s perfectly Brooklynian in its ethics: Estabrooke goes to an upstate farmer for the whole grains, wheat berries, corn, and rye from which he makes his 180-proof booze; the logo was designed by a local artist; the bottles are sourced from an ecofriendly French glasswork; and — once everything is open for business — the distillery will pour all tastings into compostable cups.
