Get Your Fillet With a Salmon CSA

There are CSAs for produce, for pigs, and for sweet Maine shrimp. Now there’s one for a highly prized seasonal delicacy: wild Alaskan salmon. The Iliamna Fish Co., run by a third-generation extended family of Bristol Bay fishermen, introduced its sustainable, set-net-caught sockeyes to New York restaurants a couple of years ago and is now offering them to the general public. Following the CSA model, shares are sold preseason, and the vacuum-sealed, flash-frozen fillets can be picked up in late August at the Brooklyn Kitchen ($198 per twelve-pound share; enroll through June 15 at redsalmon.com).
