Toby Maloney and Jason Cott, whose company Alchemy Consulting is responsible for the drinks list at the Rusty Knot (and also Chicago’s esteemed Violet Hour) are opening a Lower East Side coffee bar, and it won’t be just any coffee bar. According to a Craigslist ad seeking “coffee bartenders,” “we source beans from roasters around the country, create home made syrups with fresh ingredients and have the ability to utilize high end spirits and liqueurs. Additionally, we eschew espresso machines, featuring multiple styles of American brewed coffee.” Given the bacon old-fashioned on the menu at the team’s Nashville project, the Patterson, can we expect more fun with bacon coffee?
