The Randolph Installs Coffee Bartenders for ‘Slow’ Service

Last month Toby Maloney and Jason Cott (the team behind the drinks at Rusty Knot and others) put out a call for “coffee bartenders” on Craigslist, and today we discover details about the project. An e-mail from Hari Nathan Kaylan of the Randolph at Broome indicates that his Nolita bar will now be open from 7 a.m. till 5 p.m., with a coffee program that will take inspiration from sixties Greenwich Village coffee houses. The beans will be from Intelligentsia, Counterculture, the Roasting Plant, Oslo, Gimme!, Dark Matter, and others — but they won’t be used for espresso. Instead, they’ll be used for “slow” coffee which, writes Kaylan, “will be a more personal, cocktail-like experience.” Hence the coffee bartenders. Two examples: The Pemberton consists of kola nut, eucalyptus, and lavender honey. The New World is made of toasted pecans, cream, and salt. Here’s hoping a flaming Spanish coffee is also served.
