Fedora Gets Chef From Au Pied de Cochon

According to Florence Fabricant, Gabriel Stulman has hired Mehdi Brunet-Benkritly to helm the kitchen at the new Fedora. Like Hugue Dufour of M. Wells, he’s a graduate of Montreal’s porky favorite, Au Pied de Cochon. Meanwhile, Stulman opened Jeffrey’s Grocery a couple of days ago and took Metromix on a tour of the inventory. Never mind the food, which we’ve already told you about — the uniforms are sourced from Levi’s, Gitmman Brothers in Pennsylvania, Hillside out of Brooklyn, Kenton Sorenson Leather Products out of Madison, and Stanley & Sons out of Brooklyn. Says Stulman: “We are reppin’ New York as much as we can. We’re reppin’ the United States as much as we can in product, beer, wine, cheese, clothing.”
