According to a press release, David Chang is opening his first non–New York restaurant in Australia? So this is what Budd Mishkin was talking about! For some time, Chang has been toying with the idea of Vegas, where the environment is said to be more restaurant-friendly, but it turns out his first project in a casino will be at Star City in Sydney. It’s currently undergoing an $860 million redevelopment that will include restaurants from Chang, a former executive chef for Nobu in the Bahamas, and some buzzy Australian chefs. And you thought midtown was a stretch for the Changster! Expect Aussiefuku (actually, Chang tells the Sydney Morning Herald that the concept is still being worked out) to open late next year.
