Remember Danji, the 33-seat Korean small-plates joint coming to Hells Kitchen? A blog tracking the restaurants construction originally put its opening at October; a couple of months later, Danji opens this evening. Again, this is Hooni Kims first solo venture after stints at Daniel (as chef de partie) and later at Masa, where he prepared the restaurants Korean staff meals. Hell be applying French technique to the flavors of Korea (where he was born, though he was raised in Manhattan), and his menu is separated into traditional dishes like kimchee pancakes and grilled pork belly, and less rigorously authentic modern dishes like kimchee bacon-fried paella. The desserts come from Paris Baguette, and former Counting Room mixologist Vincent Favellas cocktails incorporate ingredients like ginger ginseng, milkis soda, and Asian pear.
