First Look at Hemant Mathur’s Tulsi, Opening Next Week

Fresh from an acclaimed six-year stint as co-chef at Dévi, Hemant Mathur strikes out on his own next week with Tulsi, a regional-Indian restaurant named for the herb holy basil. It would be enough to export fan favorites like Manchurian cauliflower to a new Zip Code, but Mathur’s bolstered them with novelties like tandoori tofu with tomatillo relish, a trio of the Tibetan dumplings called momos, and goat dum biryani (an Indian potpie of sorts, sealed with a naan-dough crust). Also of note: a chaat cart, for tableside preparation; a seven-course tasting menu, launching next month ($65, $95 with paired wines, vegetarian option available); and desserts like black-cardamom chocolate torte with Muscat gelato, courtesy of Mathur’s pastry-chef wife, Surbhi Sahni.
