After ten years as Le Bernardin’s general manager, Sally Chironis left to have a baby, but when the urge to work returned, she parlayed her managerial skills into a post running a Hamptons landscaping company, rallying her former assistant general manager Tito Rahman to join the project. The two kept close ties to the restaurant industry, and when the right space turned up — on 53rd Street off Ninth Avenue — they grabbed it. They opened La Silhouette last week.

“It’s an up-and-coming area,” Chironis tells us. “There are a lot of people making over $100,000 — families, gay couples — and not a lot of this type of restaurant,” She’s enlisted Richard Bloch, the architect she met when he worked on the private room at Le Bernardin, and David Malbequi, who had been banquet chef at Daniel and chef de cuisine at BLT Market. As they head into their second week, they’re watching the door for more than just critics. Says Chironis: “David is close to Daniel [Boulud] and Laurent [Tourondel], and we personally sent invitations to Maguy [Le Coze] and Eric [Ripert].” Will these menus lure them in? Click to find out!
