Today the Feast posts video of Momofuku Milk Bar’s 11,000-square-foot cookie commissary at the burgeoning intersection of Metropolitan Avenue and Havemeyer Street in Williamsburg. Yes, you read that correctly, 11,000 square feet of space for all those cookies and crack pies! Speaking of cookies, in the video head pastry chef Christina Tosi confirms our worst fears about exactly how much butter is in each crispy, sugary disk: enough that the kitchen contains special “cookie refrigerators” where trays sit for a period before going into the oven. “There’s so much butter that we force into them, they have to be cold when they’re baked or they go flat as a pancake,” says Tosi.

We attended a dance party this weekend at the commissary and witnessed Tosi, David Chang, and some other food-world notables getting funky in the massive two-room workspace, fueled by fresh-out-of-the-oven treats. If you want to get in on the baked goods, a retail window is open daily from 10 a.m. to 6 p.m. (credit cards only).
