The upscale restaurant opening in the Bohemian National Hall in Yorkville now has a name and a website. Though reps have been mum, a Grub Street commenter informs that Hopsoda’s chef will be Olda Sahajdak: “As executive chef, Olda will be a ‘commuter,’ shuttling between New York and Prague every two months to maintain the high culinary standards of HOSPODA while simultaneously drawing inspiration for new trends to introduce at La Degustation Bohême Bourgeoise, which he will continue to head.”

The Prague restaurant describes its seven-course menus as “traditional meals of Czech culinary art from the end of the 19th century inspired by masterful techniques of the culinary personality Marie B. Svobodová,” and DNA Info spotted a $76 prix-fixe preview menu (now vanished from Hopsoda’s site) consisting of “upscale delicacies as calf sweetbreads in périgourdine sauce and house smoked beef tongue with baked apple … Patrons might also be able to sop up popular and rare Czech beers with beef tartare, garlic soup and cold house smoked pork belly.”
