Sometime over the past few years restaurant diners decided that it was perfectly normal to order up whole roasted bones, grab a spoon, and dig out heaps of marrow to spread on toast. Variations of this dish have popped up on countless menus around town, and we have to admit that they are almost always delicious. How could bone marrow do wrong? But we wondered if marrow could have life beyond the bone, and what other ingredients would be improved by its luscious beefy flavor. Here are six of our favorites.
What we found was that once liberated from the bone, marrow can enhance just about anything. From sprucing up a serious sauce at TRU, to giving a beefy punch to risotto at Owen & Engine, its uses seem limitless.
