An insider tells us that a deal has been inked for a second location of East Village fondue bar Bourgeois Pig, which will open in Carroll Gardens in about three months. Partners Ravi DeRossi, Luis Gonzalez (executive chef of Cienfuegos and Death & Co.) and Frank Cisneros of Dram are behind the project, which will have a brief, daily-changing menu with rotating offerings that might include a lobster bisque or a dark-chocolate-bacon-beer fondue. While there will be a serious wine program, the main focus is cocktails. Our source reveals that, in contrast to the speakeasy, old-timey vibe of many of the drink dens around town, the quaff program here will be more “Euro-style,” with a focus on amaros. The former Calpurnia Wine Bar will be decked out much like the first Bourgeois Pig, with marble floors and flocked wallpaper, though it’s cozier: 40 seats inside and 20 outside.
