The Dutch: It’s very good, and very popular. Which means actually getting in can be sort of a pain. But now, Esquire’s food blog Eat Like a Man has published the recipe for the restaurant’s superb little oyster sandwiches. Turns out the breading is straightforward (cornmeal, paprika, salt, and cayenne), but the no-longer-secret sauce is made with mayo, dijon, cornichons, and Rick’s Picks Smokra. As for the oysters: “You need big ones,” says Andrew Carmellini. “Because with the little ones you only taste the breading.” [Eat Like a Man/Esquire]
