The Times has a story about inmates at Rikers Island who have found skills and solace in the kitchen, thanks to a life skills program called Fresh Start, which teaches prisoners how to cook, among other things. The piece follows a man named Richard Powell; he once had a problem with authority and now finds himself “folding the wings of 20-pound turkeys under the breasts,” feeling good about nourishing others, and learning “little techniques, like dicing so we don’t cut off our fingers,” he says.
