Confirming our earlier report, Eater discovers Graydon Carter will be helping with the design of the forthcoming, long-awaited reboot of the space that last was the equally fabled and doomed Beatrice Inn. Additional details are also proffered by Waverly Inn partner and maître d’ Emil Varda, who will also be a partner at the new restaurant, now targeting a “January or February” opening. (The spot may or may not keep its name.) According to Varda, current plans involve saving “as much of the old and original pieces as we can” that survived the Beatrice’s notorious party animal phase, setting the dining room for 90 seats, and serving a menu of comfort food at “accessible prices.” [Eater NY, Earlier]
