Burritt Tavern to Open April 9; Palmer Plots More Hotel Takeovers

Charlie Palmer has more than just the one San Francisco hotel makeover in his sights. During this past weekend’s Pigs & Pinot festivities in Healdsburg he revealed to Grub Street that the Burritt Tavern (417 Stockton Street) and revamped Burritt Room are set to open on April 9, and also that he’s not quite done there when it comes to his San Francisco empire-building plans. “I said I’d never open a San Francisco restaurant,” he said. “But a restaurant in a hotel, that’s a little different.” He said he and his partners at City Core development “lucked out” in snagging the former Crescent Hotel, to be renamed the Mystic Hotel, with the historic and well loved bar inside. And now they’re looking a “couple more hotels” in town, with the idea of doing something similar, presumably, in terms of chef-driven boutique hotels with new eateries.

As we mentioned before, Burritt Tavern will be helmed by executive chef Ashley Weaver, and will be a steakhouse with a speakeasy vibe — Palmer tells us that the booths in the new space will have the option of being completely curtained off for total privacy, with old-school flags that can be put up requesting “service please” in order to summon waitstaff. Weaver was formerly a sous chef at Palmer’s New York flagship, Aureole, and executive sous chef at Charlie Palmer at Bloomingdale’s in Costa Mesa.

Bar manager Liam Gilmore will be introducing a new cocktail list in the Burritt Room as well, with a focus on classic cocktails.
