A Michael White alumnus who worked at Ai Fiori is teaming up with Michael White’s former business partner Chris Cannon on a 80-seat restaurant called All’Onda, at 22 East 13th Street just off Union Square, reports Diner’s Journal. The name All’Onda connotes an undulating, “soupy” style of risotto that will be served at the restaurant that is also easy to find in Venice; the city’s foodways will also inform the menu of crudos and handmade pastas. Chris Jaeckle says the ancient spice trade of Venice will allow him to cook with a broad range of flavors. The project marks Cannon’s return to the New York scene after a sixteen-month-long absence following the closure of Convivio and Alto. It will be more casual than his previous restaurants.
