Morris Grilled Cheese Team Opening Glady’s in Prospect Heights

Michael Jacober worked at Per Se, Insieme, and Annisa before opening the popular Morris Grilled Cheese truck, and today, the restaurant veteran tells us he and partners Chris Austin and Nick Curtola will open a full-service spot called Glady’s on Franklin Avenue in Prospect Heights later this fall.

Jacober isn’t ready to reveal too many details, but he says the menu at Glady’s will be dinner only to start and “definitely sandwich-heavy,” with plenty of small plates and bar snacks. He also didn’t reveal the full address, but an SLA app reveals the spot will be at 788 Franklin Avenue, at the corner of Lincoln Place.

The restaurant will have a full liquor license and, best of all, a wood-fired grill. Curtola, who worked at Roman’s, Franny’s, and, of course, did a stint at Noma in Copenhagen, will smoke the restaurant’s meats over hardwood. The restaurant is planning to open by mid-December.

Morris is named for Jacober’s great-grandfather and Glady is his paternal grandmother, Morris’s daughter. Jacober and Austin, the truck’s chef who did stints at Franny’s and Komi in D.C., are known for their ever-changing menu of sandwiches, such as guanciale with ramp butter and gouda, and elegant pairings like wintered broccoli and raw cow’s milk cheese — the truck is even the first of its kind to be honored with Slow Food’s Snail of Approval.
