The ornate and Michelin-starred Dressler in Williamsburg is losing its chef, Diner’s Journal reports. Polo Dobkin, the restaurant’s executive chef of seven years, tells FloFab that his immediate future may be uncertain, but long-term plans will likely include opening his own restaurant. Meanwhile, in Tribeca at Corton, Eater reports pastry chef Shawn Gawle has left to work at Saison in San Francisco. Gawle was named a Food & Wine Best New Pastry Chef earlier this year. At Corton, he has been replaced by Blake Abene, the restaurant’s previous pastry sous chef. [Diner’s Journal/NYT, Eater NY]
