Today, the Times chimes in with its annual list of notable fall restaurant openings, which gets the experts at “Diner’s Journal” wistful enough to supply their own tangential list of fantasy restaurant picks. Wells wants genuine, spectacular Cantonese and regional Vietnamese restaurants, Sifton wants a decent bagel, while Glen Collins notes the city is sorta bereft of the chopped barbecue “faithful to the epistemology of Eastern North Carolina.” Florence Fabricant goes for the fine-dining jugular: “I would be delighted if Laurent Gras got his act together and opened a restaurant in New York,” she writes of the pop-up-loving chef.
