Last Friday, Empellón Cocina inaugurated its Push Project, a series of collaborative dinners between a visiting chef and Empellón’s Alex Stupak. Last month, Stupak announced plans to host four similar dinners a year, and in the process, loosen the constrictions on cooking styles and broadly assigned food categories. By all accounts, Enrique Olvera of Mexico City’s Pujol started things off (Bon Appétit’s Feed posted a great recap here) with a bang. Here’s a quick look behind the scenes of the ambitious project.
