Park Slope’s Colson Patisserie signed a lease at 22 East 36th Street inside the waterfront manufacturing complex formerly known as Bush Terminal, where owner Yonatan Israel will bake pastries for wholesale operations but also open a small café for neighbors. The 40-acre property is home to a growing number of small-batch food and drink producers, including Blue Marble, Tumbador, and Industry City Distillery. Is the former shipping and port container neighborhood becoming a bona fide food-manufacturing district? Even chocolate-maker Jacques Torres signed a lease at the nearby Brooklyn Army Terminal, where his football-field-size production facility will include a “a 70-foot tunnel, a chocolate powder room, an ice-cream room, and a five-ton chocolate melter.” At least they’ll have plenty of sweets and coffee to make it through the day.
