Le Cirque Chef Olivier Reginensi Now Cooking at Maison Kayser

Following last fall’s disastrous one-star New York Times review, the former Le Cirque chef has now landed at Maison Kayser, where he will devise and cook menus of French bistro standards like springtime chilled pea soup with mint and cocotte de poularde to accompany Eric Kayser’s breads at the Parisian baker’s rapidly expanding boulangerie mini-chain. The 39-year-old Le Cirque announced last fall it would replace the classically trained chef, and while no announcements have been made, the restaurant has been hiring sous chefs as of late and also serving greatest-hits-like “Chef’s Classic” menus, composed of dishes devised originally by the lauded restaurant’s past toques, including Craig Hopson, Jacques Torres, Alain Sailhac, and Daniel Boulud.
