Off the Menu today brings word of Pinch, Alain Ducasse and Mark Advent's forthcoming 250-seat restaurant opening at the next month in the newly refurbished Empire City Casino in Yonkers. (Yes, Yonkers.) The Yonkers Daily Voice reported in January the restaurant will be a "take on a classic premium diner," circa the late forties, early fifties. Grub Street hears that Pinch is beer-themed, with 100 taps serving New York State beer, but with tap lines and kegs streamlined into the dining room's design — there's even a growler station and "tap booths."
The restaurant comes courtesy of Ducasse Studio, the culinary rebel's consulting service. It will have an open kitchen, and in addition to a vast raw bar, there are two private dining areas, in keeping with the needs of various high-rollers. Executive chef Fabienne Eymard worked at the three-star Taillevent in Paris; both Eymard and pastry chef Tamber Weiersheuser are veterans of multiple Ducasse venues. Menus will be delivered on iPads, of course; dishes include straight-up Cobb Salad, rib eye for two, and, reportedly, gratinéed French onion soup served with a lager shooter — this is a Ducasse joint, after all.
